Probably no other dish is more associated with Texas than Chicken Fried Steak (a must served
with a fresh green vegetable, mashed potatoes and a simple salad -
ranch dressing is one of the most preferred). This recipe is how
I make mine except that I learned years ago, USE AN IRON SKILLET! And, I
use a whisk when adding the room temperature milk to the skillet when

Guacamole
(avocado dip/topping) Used as a dip with tortilla chips or as
topping to tacos, enchiladas, or fajitas. You can also add
tomatillas or about any of the salsas or pica de gallo that you think
would spice this up. Just remember, a little goes a long ways and
you can always add more if at first it's not hot enough.
Queso
(cheese dip served with tortilla chips) Well, here's one
version but personally, I prefer the easier version: Take a loaf
of VELVETA, a bottle of your favorite salsa or pico de gallo and melt -
add the salsa/pico a little at a time to test the consistency (couldn't
be easier and yummmmm - i use the microwave, stirring every 20
seconds). Others prefer to use a can of rotell tomatoes (chopped
up) and for an even spicier, they add chopped jalepenos or try adding
chopped onions or fried turkey or hamburger meat.
